Strawberry Dessert Contest Winners Announced

With fresh, local strawberries now in season, the Farm Credit Farmers Market held a strawberry dessert contest on May 10th. The winners of the contest were as follows: 1st place to Julie Kirby for her Strawberry Cream Cheese Icebox Cake; 2nd place to Julia Kirby for her Strawberry Pie, and 3rd place to Tammy Freeman for her Strawberry Cobbler.

Be sure to try making this winning strawberry dessert yourself!

Strawberry Cream Cheese Icebox Cake

  • 2 pounds strawberries
  • 2 sleeves graham crackers
  • 1 – 8oz package cream cheese (room temperature)
  • 3 cups milk
  • 2 cups cool whip (1.8 oz carton)
  • 1 – 14oz can sweetened condensed milk
  • 2 – 3.4 oz package instant cheese cake flavored pudding

Instructions:

Wash & cap berries, slice berries ¼” thick and set aside. Line bottom of 13×9 baking dish (glass) with graham crackers and set aside. Combine cream cheese and condensed milk in a large bowl and beat with a mixer until smooth and creamy. Add pudding mixes and milk then continue mixing on low for 4-5 minutes or until mixture starts to thicken. Fold in 2 cups cool whip until smooth. Pour ½ of cream cheese mixture over graham crackers. Arrange a single layer of strawberry slices over cream cheese mixture. Top berries with another layer of graham crackers, then cover with remaining cream cheese mixture. Top with another layer of sliced berries. Crush remaining graham crackers and sprinkle on top. Cover and refrigerate 6 to 8 hours.

Mark your calendars for Blueberry Day at the Farm Credit Farmers Market on Friday, June 14th. A blueberry dessert contest will be held. Entries will be accepted from 1pm to 1:30pm. Contest is open to all ages and must include 1 cup of blueberries. For more information about Blueberry Day, the dessert contest, or the Farm Credit Farmers Market, please contact the Wayne County Cooperative Extension Office at 919-731-1520.

The farmers market is open on Thursdays and Fridays from 10am to 5pm and Saturdays from 9am to 2pm. The farmers market is located behind the Maxwell Regional Agricultural & Convention Center at 3114 Wayne Memorial Drive in Goldsboro.
